Pumpkin sponge cake recipe: ingredients

  • 200 g. roasted or cooked pumpkin

  • 200 g. of sugar

  • 3 large eggs

  • 70 g. Of olive oil

  • 1 teaspoon ground cinnamon

  • ¼ teaspoon ground nutmeg

  • 200 g. yeast flour

  • Butter for the mold

  • Optional: 20 g. chopped walnuts

  1. Cut the pumpkin into chunks and be sure to remove the seeds and skin.

  2. Place the pieces in a microwave-safe container and cover with cling film.

  3. Put the container in the microwave and cook the pumpkin on high power for about 10 minutes.

  4. When it is soft, drain the excess liquid and mash it a little with a fork.

How to prepare pumpkin sponge cake in the microwave, step by step

  1. In a pastry bowl mix all the ingredients in the following order: pumpkin, sugar, eggs, oil, flour, cinnamon and nutmeg (optional: add walnuts)

  2. Stir everything until you get a homogeneous dough.

  3. Use a mixer to finish mixing the ingredients until smooth.

  4. Prepare a microwave-safe silicone mold, spread it with the butter and pour the batter into the mold.

  5. Put the mold in the microwave on full power for about 10 minutes.

  6. After this time, do not open the door. You must leave the cake inside for about 15 minutes so that it finishes cooking with the steam generated.

  7. Remove the mold from the microwave and let it rest until cool.

  8. Unmold the pumpkin sponge cake and serve to taste.
