OPENING: New air for Acebuche, a restaurant with a lot of tradition

Javier Gassibe. They met four years ago working at El Invernadero, in Madrid, a restaurant with one Michelin star, one green star and two suns from the Repsol guide. Later, separately, they have passed through other renowned venues, such as La Bien Aparecida or Noi.

There are couples who plan trips, dream of a house, project a family… However, Carmen and Javo devised dishes and menus during their time together. Thus, without realizing it, they were planning a project that became a reality last month. Is about

After a visit to the town of Seged, where she is from, they received the news that the owners of this mythical restaurant were retiring, so they decided that it was the perfect place to return to their origins and set up their project by applying the techniques gastronomy that they had learned in Madrid. Despite having several names in mind, they decided to keep Acebuche because of the history and tradition of this place. You know, a wild olive tree was born, that is, an olive tree, at one of the entrance doors to the Parador de Zafra. From that moment on, it was renamed the Puerta del Acebuche. In addition, the restaurant as such has been a benchmark in the municipality of Badajoz for almost two decades.

What has changed is the gastronomic proposal. El Acebuche de Carmen y Javo offers an Extremaduran-Argentine fusion, since Javo is from there. This is materialized in dishes such as ratatouille with polenta or lamb sorrentino in stew, among others. There are thirteen dishes designed to share, and Acebuche’s approach is that of a meal with friends. This couple is integrated into a team of five people, in which everyone does everything. «We are both in the living room and in the kitchen. We receive, we serve drinks, we cook… It is the same concept that we handle in our house”, they assure. They also make the bread themselves, with up to three different types. They also have Iberian cold meats and even their own sausage that Javo makes with an Argentine recipe.

As for wines, at the moment they only have Extremaduran and national wines, but the idea they have is to progressively incorporate some from Argentina. “It will be soon, but for now, we want people to try and live new experiences,” they say.
